Or the staff for that matter??<br /><br />As for the staff, When I went to Panama and went to one of the best known Chinese restaurants, I ran into the same situation: local, non Chinese staff. Weirdest thing was to hear them pronounciate the name of the dim-sum dishes as well as any Cantonese speaker!
